Pairing dark chocolate with South Indian filter coffee

Strong decoction, hot milk, and a square of 70% dark — the most natural pairing in the South, and the rules for getting it right.

Filter coffee and dark chocolate grew up in the same weather. Both are roasted, both live and die by their bitterness, and both reward slowing down. Done right, the pairing makes each taste more like itself — the coffee brighter, the chocolate deeper.

Three rules

  1. Match intensity. A strong decoction flattens a delicate milk chocolate — reach for 70% or darker.
  2. Chocolate first. Let a square melt fully on the tongue, then sip. The coffee's heat re-melts the cocoa butter and carries the flavour back.
  3. Skip the sugar. The chocolate is the sweetness. Unsweetened kaapi against a jaggery-toned dark bar is the whole point.

Sunday morning, steel tumbler, one bar broken into squares on a plate for the table. That's the pairing. Everything else is decoration.
